Salt Baked Fish with the Mambo Family


For the 2015 summer, myself and Lucky Life Music Label Boss Ben Fhurst, my brother Steve joining in, we were Lucky enough to find?a lovely over 250 year old Ibicenc house with a perfect view over the breathtaking Salinas Salt Flats, so it was quite fitting when towards the end of the year, just before moving out, I got to finally visit the Salt Flats, find out how it all worked, and even got up on the huge salt mound we all see as we land on the magic rock by aeroplane. Enjoy this Episode with Tess Prince as she takes her magic and flavours to none other than the Cafe Mambo family, for a near winter cook up in their Vila Mercedes Restaurant in San Antonio. To make the best fish dish ever, I head to Salinas to collect the purest sea salt straight from the source before making a lovely lazy lunch for The Mambo Brothers DJs and their legendary dad Javier at his flagship restaurant Villa Mercedes. I recreate this iconic fish dish with a little twist of zingy caper sauce and seasonal roasted vegetables fresh from the fields. It?s a total show stopper that anyone can easily make!
